Tomato-Basil Squares

 

1 - 10 oz pkg pizza crust     

2 cups shredded mozzarella cheese, divided
¼  cup fresh parmesan cheese, grated    

2 TBL fresh basil leaves, snipped OR 2 tsp dried basil leaves

2/3 cup mayonnaise

1 garlic clove – pressed   

4 plum tomatoes, thinly sliced

    Preheat oven to 375°.  Roll out pizza crust on 12" X 15" rectangular baking stone.  Sprinkle crust with 1 cup mozzarella cheese; set aside.  Grate parmesan cheese, snip basil.  Using a 1-quart bowl, combine the remaining 1 cup mozzarella cheese, parmesan cheese, basil and mayo; mix well.  Using a garlic press, press garlic over the cheese mixture; mix well.  Slice tomatoes thinly and arrange in a single layer over the mozzarella cheese on crust.  Place mozzarella cheese mixture over tomatoes; spread evenly.    Bake 15-20 minutes or until top is golden brown and bubbly.  Serve warm.  Cut with pizza cutter.  Yields 20 servings
Approximately 130 calories and 9 grams of fat per serving.
Tip:  I use low-fat cheese and light mayo- so that will cut your fat and calories a bit!!

Frozen Mocha Torte

1 ¼ cups cho. wafers (graham       2/3 cup choc. syrup

crackers) crumbs (about 24) divided      2 Tbls instant coffee granules

¼ cup sugar                     1 Tbls hot water

¼ cup melted butter or margarine      1 cup whipping cream, whipped

1 pkg (8oz) cream cheese (softened)   

Choc. covered coffee beans, optional

1 can (14oz) sweetened cond. Milk                    

 

Combine 1 cup wafer (graham crackers) crumbs, sugar and butter. Press onto bottom and 1 inch up the sides of a greased 9-inch springform pan; set aside. Ina mixing bowl, beat cream cheese, milk and choc. syrup until smooth. Dissolve coffee granules in hot water; add to cream cheese mixture. Fold in whipped cream. Pour over crust. Sprinkle with remaining crumbs. Cover and freeze for 8 hours or overnight. Uncover and remove from the freezer 10-15 minutes before serving. Garnish with coffee beans, if desired (or choc. Chip or shaved chocolate).

 

 

Malt Shop Pie

 

1 Prepared graham cracker pie crust           

1- 8oz. Container Cool Whip (thawed)

1 pint vanilla ice-cream (softened)              

8oz. malted milk balls (crushed)

 

In a large bowl combine ice-cream and Cool Whip. Fold in candy. Pour in crust, cover. Freeze at least 4 hours before serving. Store in freezer.

 

 

Hello Dollies

 

½ cup butter or margarine           1 ½ cups crushed graham 

1 cup chopped walnuts                              cracker crumbs (1 sleeve)

1 cup chocolate chips                   1 ½ cups coconut 

1 can (14 or 15oz) sweetened condensed milk

 

Preheat oven to 350° (325° for glass dish). In a 9”x13” pan, melt butter in the oven. Sprinkle crumbs evenly over butter. Place, in order, remaining ingredients. Press down firmly. Bake 35 minutes or until lightly browned. Cool at lest 20 minutes before slicing. Cut into bars. Store loosely wrapped at room temperature.

 

 

Fruit Crumble

 

3 cups sliced apples or peaches                   1 cup flour

1 pint blackberries or raspberries                ½ cup sugar

(freash or frozen)                      1 cup cold butter

½ teaspoon nutmeg

 

Preheat oven 375°, Butter 8x8 pan. Arrange sliced fruit in dish. Sprinkle berries evenly over sliced fruit. In a medium bowl mix flour and sugar. Cut butter in with pastry cutter until crumbly. Cover fruit with topping. Sprinkle nutmeg on top of crumb mixture. Bake 25-30 minutes. Serve warm or cool.

 

 

 

Apple Crisp

 

Preheat oven 350°

4 cups sliced apples          ¼ teaspoon cinnamon

2 Tablespoons sugar          ¼ cup water

 

Arrange apples in a buttered 8x8 baking pan. Mix and sprinkle cinnamon and sugar over apples. Pour water over apple mixture.

 

½ cup flour                           ¼ teaspoon nutmeg

1/8  teaspoon salt                  3 Tablespoons cold butter]

¼ teaspoon cinnamon

 

In a medium bowl, blend remaining dry ingredients. Cut in butter until crumbly. Sprinkle over apple mixture. Bake 40 minutes. Serve warm or cold.

 

 

Polka Dot Muffins

 

2 cups baking flour               1 ¾ teaspoon baking powder

½ teaspoon baking soda                          ¾ cup granulated sugar

½ teaspoon salt                   1 egg

1 cup buttermilk ( or use 1 Tblsp vinegar mixed in 1 cup milk)

¼ cup unsalted butter (melted & cooled)

½ cup semi-sweet choc. chips

 

Preheat oven to 400°

Sift together flour, sugar, baking powder, baking soda, and salt. Add chocolate chips, stir to combine. Form a well in the middle of the dry ingredients. In a small mixing bowl whisk together the egg, buttermilk, and butter. Pour egg mixture into the well of the dry ingredients and mix until just blended. Line a muffin pan with muffin pan cups. Bake on the middle rack for 20 minutes.

 

 

Fruit Squares

 

¾ cup Butter Crisco                 1 ½ cups sugar

3 eggs                           1 teaspoon vanilla

3 cups flour                       canned fruit pie filling

 

Preheat oven to 375°

Cream together Crisco, sugar, eggs, and vanilla. Add flour, mixing a little at a time until blended. Spread ½ batter in bottom of baking dish. Flour hands and pat down. Pour in canned fruit. Crumble remaining batter on top of fruit. Sprinkle sugar on top. Bake for 35-40 minutes.

 

Chocolate Mint Éclair Dessert

23 whole chocolate graham crackers     

3 cups cold fat-free milk

2 packages (3.3 to 3.4 ounces each)

              instant white chocolate or vanilla pudding mix

½ teaspoon mint or peppermint extract

3 to 4 drops green food coloring, optional            

1 carton (8 ounces) frozen reduced-fat whipped topping, thawed

 

Chocolate Frosting:

 

1 tablespoon butter or stick margarine                  

2 tablespoons baking cocoa

2 tablespoons plus 1 teaspoon fat-free milk            

1 teaspoon vanilla extract

1 cup confectioners sugar                                               

 Coat a 13-in.x9-in.x2-in. dish with nonstick cooking spray. Break five whole graham crackers in half; line the bottom of pan with three half crackers and six whole crackers. 

     In a bowl, whisk milk and pudding mix for 2 minutes. Whisk in extract and food coloring if desired. Fold in whipped topping. Spread half over graham crackers. Top with another layer of three half and six whole crackers. Top with remaining pudding mixture and graham crackers (save remaining half crackers for another use). Cover and refrigerate for 2 hours.           

     For frosting, melt butter in a saucepan. Stir in cocoa and milk until blended. Remove from the heat; stir in vanilla and confectioners’ sugar. Spread over dessert. Cover and refrigerate overnight. Yield: 15 servings. Taking from Taste of Homes Magazine

Ultimate Chocolate Chip Cookies

 

2 ¼ cup Butter Flavor Crisco        5 ¼ all purpose flour

2 cups packed dark brown sugar            3 teaspoons salt

1 ¾ cup granulated (white) sugar           1 ½ teaspoons baking soda

6 Tablespoons milk                ¾ teaspoon baking powder

3 Tablespoons vanilla              24oz semi-sweet choc. chips

3 eggs

 

Preheat oven to 375°

Combine Crisco, brown sugar, granulated sugar, milk, and vanilla in large bowl until well blended. Add beaten egg into creamed mixture. Combine flour, salt, baking soda, and baking powder. Mix into creamed mixture just until blended. Stir in chocolate chips. Drop tablespoonfuls of dough 2 inches apart onto ungreased cookie sheet. Bake for about 9-12 minutes (depending on preference of chewy or crispy)

 

Millionaire's Pie

1 can condensed milk
1/2 cup lemon juice ......(stir together with the condensed milk)

Add
1 can crushed pineapple ....well drained
Fold in 1 8oz. container cool whip
Pour into 2 Keebler Pie Crusts......(short bread crust)
Top with more cool whip and refrigerate ..about 4 hrs

Easy Peanut Butter Cookies

2 eggs well beaten
2 cups granulated sugar
2 teaspoons baking soda
2 cups chunky peanut butter
2 teaspoons vanilla

Preheat oven to 350 degrees
Lightly grease cookie sheet
In a large bowl using a wooden spoon mix sugar and baking soda. Add eggs and vanilla. Mix well. Stir in peanut butter until well mixed. Lightly roll 1 tablespoon worth of cookie dough into a ball and place 2* apart on prepared cookie sheet. With the tines of a fork criss-cross marks on top of cookies. Bake8-9 minutes.
Cookies keep well for 3 days. You may do 1/2 the recipe successfully.

Raisin Bran Muffins

 

2 eggs                          ¼ cup olive oil

1 teaspoon vanilla                                    2 cups flour

2 ¼ cups milk                       1 teaspoon baking soda

2 teaspoons baking powder                   4 cups Raisin Bran

1 cup raisins

 

Early in the day in a large bowl beat eggs, oil, and vanilla. Next add flour, baking soda, baking powder and milk. Beat well. Fold in Raisin Bran and raisins. Mix well and store in the refrigerator for 5 hours. Preheat oven to 350°. Grease and flour muffin tins, or use liners. Fill tins 2/3 full. Bake about 18-20 minutes.

Sugar Free Fudge

 

Ingredients

  • 16 oz Cream cheese, softened

  • 2 ea Unsweetened chocolate squares (1oz ea)

  • 1/2 c Sugar substitute

  • 1 t Vanilla extract

  • 1/2 c Chopped pecans or walnuts (optional)

Melt chocolate. In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Pour into well- greased 8-inch square baking pan. Cover and refrigerate overnight.

Exchanges: 1 fat

 

Chocolate Frosting - Sugar Free

Ingredients

  • 1 envelope Dream whip

  • 1/2 teaspoon Vanilla

  • 1/2 cup milk

  • 1 package Sugarfree chocolate pudding(2oz)

Blend together skim milk, vanilla, and dream whip (or sugarfree whipped topping mix). Beat til stiff. Add pudding mix and continue to beat til light and fluffy. Add more milk if too thick.

Exchanges: 1/2 fat

Peanut Butter Cookies

Ingredients

  • 1/4 cup margarine

  • 1/4 cup creamy peanut butter

  • 2 tblsp granulated sugar replacement

  • 1 egg

  • 1/4 cup water

  • 1 tsp vanilla extract

  • 1 1/2 cup flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

Cream together margarine, peanut butter and sugar replacement. Add egg, water and vanilla. Beat until fluffy. Combine flour, baking soda and baking powder in sifter and sift dry ingredients into creamed mixture. Blend completely. Chill overnight. Drop by teaspoonfuls onto lightly greased cookie sheets, 2 to 3 in. apart. Press by flat criss-crossing fork. Bake at 375 degrees F for 12 to 15 minutes or until golden brown.

Exchange: 3 Cookies = 1 Bread
